Paul Coker  I started in this industry as a dishwasher at the hospital my mom was a nurse at. The next seven years were spent cooking in Southern California and Santa Barbara. After joining the finance world post-college, I realized my calling was in restaurants and went back, this time as a bartender and server. Eventually, I signed on to the Montage in Laguna Beach as a Sommelier and Assistant General Manager at the flagship restaurant, Studio. Moving from there to Michael Mina’s Stonehill Tavern where I was part of the leadership team that won Restaurant of the Year from the Orange County Register. From there, I joined the national team at SRC Restaurant Group opening locations in Miami, Tampa Bay, and Los Angeles as the National Beverage Director. The culture and dedication I saw at Canlis in Seattle pulled me in and for the last three years I was the Cellar Master there.​

Emily Edeen  A Washington native growing up in Sammamish, Emily got her first taste of the hospitality industry working at a pizza place in high school. Finding a love of service she has continued incremental growth from serving on the Spirit of Washington to helping manage Bottlehouse in Madrona where they perennially received national recognition as a leader in the Wine Bar prototype. This was where the Wine Team at Canlis found her and recruited her. Emily was only the third person to ever pass the Canlis Sommelier Exam on her first attempt in over 70 years and the first woman to do so. A leader in culture at Canlis for the service team and the beverage team, she helped with training and recruitment throughout the dining room and through all the pandemic pivots recently made famous.
